Carol is my stepdaughter and she knocked my socks off when she made this peach cobble for me. It was a recipe from one of her grandmother's recipes.

Preheat oven to 450 degrees.

Mix ½ cups sugar, cornstarch and cinnamon in a 2 quart pan. Stir in peaches and lemon. Cook, stirring until mixture comes to a boil. Boil for 1 minute. Pour into ungreased 2 quart casserole and keep hot. Cut shortening into flour and add 1 tbsp sugar, baking powder and salt. Mix with pastry cutter until crumbly. Stir in milk, drop dough onto peaches. Bake 25-30 minutes. Serve warm.
