
Preheat oven to 450 degrees or grill to high.
Center onion and carrot on heavy duty foil sheets. Top with salmon. Sprinkle ginger; drizzle with vinegar and oil. Season it with salt and pepper. Wrap and seal foil to form four packets.
Bake 16-20 minutes on cookie sheet in the oven or grill 14-18 minutes on a covered grill.
Serve salmon and vegetables on a bed of spinach. Sprinkle with addition seasoned rice vinegar.
