Mix together and rub onto 3-4 pound pork butt with dry rub.
1 large white or yellow onion, diced
4 cloves garlic, minced
1 tbsp olive oil for sauteing
2 tbsp tomato paste
¼ cup apple cider vinegar
2 tbsp Worcestershire sauce
Saute onion until translucent. Add garlic and cook until fragrant. Remove from heat.
Mix tomato paste, cider vinegar and Worcestershire together. Add onion and garlic mixture and give a quick stir.
Place meat, fat side up, in a slow cooker. Pour sauce mixture over the meat and cook on high heat 6-8 hours. Pork should be easily shredded with 2 forks.
