
Whether you use a traditional pie crust, or the low carb and gluten free cauliflower crust I posted last week, this simple quiche is great for breakfast or dinner.
Preheat oven to 350.
Add sausage to a medium skillet. Cook and crumble until browned. Pour over a plate lined with paper towels to drain excess grease.
Mix sausage, onion, chile’s, red pepper and cheese together. Spread mixture over bottom of the pie crust; place on baking sheet. Beat eggs in a bowl, whisk in cream, salt, and pepper. Pour over chile mixture.
Place in oven and bake 40-50 minutes. Place pie ring around edges of crust to prevent over-browning if necessary. Quiche is done when a knife comes out clean.
